2 tbsp. cooking oil (vegetable oil, grapeseed oil etc.)
1 pound of shrimp, peeled and deveined
1 medium onion, sliced into wedges
1 green or red pepper, julienned or cut into 1 inch chunks
1 large carrot, julienned
1/2 cup pineapple chunks
For the sauce, combine the following in a bowl and stir until mixed together.
1/2 cup ketchup
1 tbsp. orange juice
1 tbsp. pineapple juice
1 tbsp. lemon juice
2 tbsp. sugar
2 tbsp. vinegar
1 tsp. sesame oil (optional)
Heat the oil in a large pan, and cook the shrimp and onions.
Add the pepper, carrot, and pineapple. Stir to mix, then add the sauce.
Stir to mix, then turn off the heat.
Serve with rice or as a side dish.
